Butter leaf lettuce is the gentle one. The leaves are soft and almost silky, with a mild, faintly sweet flavor and none of the bitterness you get from a sturdier leaf. It's also known as butterhead, Bibb or Boston, and it's the lettuce that makes a plain salad feel like you made an effort. Ours comes as whole loose leaves rather than a head, already separated and ready to use.

Butter lettuce wants a light hand. Dress it just before serving with a simple vinaigrette, because anything heavy will flatten the leaves and you'll lose what makes it good. The cupped leaves are the right shape for lettuce wraps and lettuce cups, and they're lovely under smoked salmon or a soft-boiled egg. Keep the other ingredients gentle. This isn't the leaf for a thick Caesar dressing.

Your lettuce arrives clean enough that it never needs washing. Most bagged leaves are washed, often more than once, before they reach the shelf, and the moisture and handling that come with washing are what start leaves wilting and turning slimy. Ours are grown spray-free in a sealed room, so they go into the pack clean, dry and undamaged.

Butter lettuce is the most delicate leaf in the range, so treat it gently. Keep it refrigerated between 34 and 41°F, sealed and dry, and don't stack heavy things on top of it. No need to rinse.

Our greens grow in sealed rooms, which means the pests, weeds and run-off that force outdoor farms to spray simply aren't there. So we don't spray. No pesticides, no herbicides, no fungicides, on anything we grow.

We had it tested rather than just stating it. An independent, ISO 17025 accredited lab screened our greens against 312 pesticides and residues, with none detected.

That's why there's nothing to rinse off. Nothing was ever sprayed on in the first place.

How we grow it

Everything we sell starts as a seed and is grown without being touched by hand, from seed to pack. It grows indoors in a sealed, climate-controlled room, with no soil, no weather and no sunlight. Every plant gets the light, water and nutrients it needs, every single day.

Those same sealed rooms change what growing takes. We recycle around 90% of the water our plants grow in, our nutrients stay in a closed loop instead of running off into rivers, and we grow a year's harvest in a single building.

What comes out is clean, consistent and ready in about half the time a field takes. It's grown at our farms in Australia, and our first US farm is under construction in Menifee, California. Every pack can be traced back to the exact batch it came from.

A soft-leaved lettuce, also called butterhead. The leaves are tender and mildly sweet, with none of the bitterness of a sturdier leaf. It's the one to reach for when you want a light, elegant salad.

Very little. They're all butterhead lettuces with the same soft leaves and mild sweetness. Bibb is usually smaller and tighter, Boston a little looser and larger. Ours comes as loose leaves either way, so you get the good part of both.

Yes. Butterleaf, butter lettuce, butterhead and mignonette all describe the same soft, sweet lettuce.

Because a head means a core you cut out and outer leaves you throw away. Loose leaves are all usable, they take up less room in the fridge, and you can take what you need without cutting into the rest.

You don't. It's grown in a sealed indoor room and never sprayed, so there's nothing to rinse off. It's ready to eat straight from the pack.

Something light. A simple lemon or vinegar and olive oil dressing lets the leaf do the work. Heavy, creamy dressings weigh the leaves down and cover the flavor you paid for.

No, we're not certified organic. It's worth knowing what that label does and doesn't cover, though. Certified organic growers can still use a long list of approved pesticides. We don't use any pesticide, herbicide or fungicide at all, on anything we grow, and we have that independently tested.

Romaine for something crisper and sturdier, or spring mix if you want variety in the bowl. Neither will give you the same soft texture, which is the whole point of butter lettuce.
